Humphrey's Hotel

We partnered with Coombes Property Group and designer Melissa Collison to deliver Humphrey's Hotel & Hatch Restaurant, transforming 800m² of destination hospitality space in Sydney’s South offering both a high-end restaurant & a character-filled sports bar. Every element reflects precise, careful workmanship through imported marble & tiles, gold detailing, custom joinery & 250kg bespoke chandeliers, complemented by distinctive Gucci wallpaper & brass swan details. These elements are carefully sourced & built to last. This landmark hospitality space perfectly balances luxury aesthetics with sustainable, enduring design principles. Within three weeks of opening, Hatch earned a Good Food Guide hat. While the award recognises their exceptional cuisine, we're proud to have built the space.
